To prepare the coconut chicken masala curry, start by cleaning and cutting the chicken and chopping the vegetables.
Heat coconut oil in a pan or kadai and add sliced onions, green chilies, curry leaves, ginger, and garlic. saute until the onions turn golden brown over medium-low flame, stirring occasionally.
Once the onions are soft and cooked, add the dry masalas - red chilli powder, turmeric powder, coriander powder, homemade garam masala powder, and chopped tomato. continue to cook until everything is well blended and cooked.
Add the chicken pieces and saute until the masala coats the chicken evenly.
Pour in the coconut milk and cover the pan. continue cooking on medium heat with occasional stirring until the chicken is tender, and the gravy thickens to your desired consistency.
