Wash, peel, and dice the raw mangoes into small pieces.
Grate the fresh coconut kernel.
In a pan, dry roast the urad dal split, fenugreek seeds, and basmati rice until they turn slightly brown and aromatic. allow them to cool down.
In a blender, grind the roasted urad dal, fenugreek seeds, basmati rice, red chillies, and half of the grated coconut into a smooth paste. use water as needed to make a fine paste.
In a separate pan, heat coconut oil over medium heat. add mustard seeds and let them splutter.
