In a bowl, prepare a thick batter by mixing all-purpose flour, corn starch, ginger garlic paste, salt, and water.
Add the baby corn and sesame seeds to the batter, coating them well. half-fry the baby corn in medium-hot oil and set aside.
Heat vegetable oil in a pan, add minced garlic, and saute until fragrant. then, add red chili flakes, tomato ketchup, soy sauce, vinegar, sugar, and salt. cook the mixture, stirring occasionally, until the sauce thickens.
Just before the sauce is fully prepared, add the half-fried baby corn back into the hot oil and cook until crispy.
In the same pan, add the double-fried baby corn and toss to coat with the sauce.
