To create the stuffed bitter gourd in nutty yogurt sauce, start by cleaning and cutting the bitter gourds into 2-inch cylindrical shapes. remove the inner white part with the seeds using a spoon and hollow out the bitter gourd cylinders.
Soak the cut bitter gourds in water mixed with a salt solution to reduce their bitterness slightly.
Next, prepare the stuffing. in a flat non-stick pan, roast the nigella seeds, carom seeds, cashew nuts, and almonds for about 2 minutes until the nuts turn golden brown in color and emit a pleasant aroma.
Use a hand blender to coarsely grind the roasted nuts and seeds into a paste.
Heat another pan with oil and saute ginger, garlic, onions, and chilies until the onions become translucent.
