Saute aromatics: in a soup pot, heat the extra virgin olive oil over medium heat. add the minced garlic cloves and sliced onion. saute until the onion becomes translucent and fragrant.
Add zucchini and spinach: dice the zucchini into small cubes and add them to the pot. stir and cook for a few minutes until the zucchini starts to soften. add the fresh spinach leaves and continue to cook until the spinach wilts.
