Blanch the spinach by boiling 6 cups of water in a saucepan. add the spinach and let it boil for 1 minute. drain the water and immediately transfer the spinach to ice-cold water for 2 minutes. drain again.
In a blender, blend the blanched spinach, ginger, and green chili until creamy.
Soak the paneer cubes in hot water for about 5 minutes to achieve a soft texture. set aside.
Heat oil in a saucepan over medium-high heat. to check if the oil is hot, add one cumin seed. if it crackles, the oil is ready.
Add cumin seeds and asafoetida to the hot oil. once the cumin seeds crackle, add the chopped tomatoes and stir-fry for 1-2 minutes until tender but not mushy.
