How To Cook?

In a mixing bowl, combine all-purpose flour, dried oregano, dried thyme leaves, chopped parsley, red chilli flakes, and a pinch of salt. knead the mixture with enough water to form a firm dough.

Cover the dough with a damp cloth and set it aside for 15 minutes.

Divide the dough into 2 equal portions. roll out each portion into a 250 mm (10") diameter circle, using a little flour for dusting.

Using a 50 mm (2") cookie cutter, cut out circles from the rolled dough to make 20 roundels in total.

Place a roundel on a clean, dry surface and put 1/2 teaspoon of grated cheese in the center. fold it over to form a semi-circle, lightly pressing the edges to seal.
