To prepare creamy cashew and lentil delight, combine the washed toor dal and whole masoor dal in a pressure cooker. add a cup of water, turmeric powder, and salt. close the pressure cooker.
Pressure cook the dals for 3-4 whistles and then turn off the flame. allow the pressure to release naturally.
In a small skillet, dry roast the freshly grated coconut, cumin seeds, dried red chili, and garlic cloves until the coconut starts turning light brown. this should take about 4-5 minutes. turn off the heat and allow it to cool.
Transfer the roasted coconut mixture into a mixer-jar and grind it into a coarse mixture. set it aside.
Heat a saucepan with 1/2 a cup of water and bring it to a rolling boil. add the cashew nuts and turn off the flame. let the cashew nuts soak in the hot water for about 15 minutes.
