To begin making the creamy tomato lentil curry, wash the red lentils (masoor dal) thoroughly and soak them in water for about 20 minutes.
In the meantime, roughly chop the ripe tomatoes, onion, garlic, ginger, and green chillies.
After soaking, drain the water from the lentils and set them aside.
In a saucepan, heat 1 tablespoon of sunflower oil over medium heat. add the chopped onions, garlic, ginger, and green chillies. saute them until the onions turn translucent and the raw smell disappears.
Add the chopped tomatoes to the saucepan and cook until they become soft and mushy.
