To prepare the chocolate cashew delight, start by grinding the cashew nuts into a fine powder. ensure there are no lumps in the cashew powder.
In a heavy-bottomed pan, combine sugar and water. heat this mixture over medium heat until it reaches a one-string consistency. to check this, take a drop of the syrup between your thumb and forefinger; when you pull them apart, a single string should form.
Add the cashew nut powder to the sugar syrup and mix well. continue to cook on low heat, stirring continuously to avoid any lumps. cook until the mixture thickens and leaves the sides of the pan. this will take about 10-12 minutes.
Remove the mixture from the heat and let it cool slightly. while it's still warm, knead it into a smooth dough-like consistency. be cautious as the mixture will be hot.
Take a clean, dry surface or a parchment paper-lined tray and spread the cashew mixture evenly to form a flat, rectangular shape. allow it to cool completely.
