Begin making the colorful veggie noodles stir-fry by boiling the noodles as per the instructions on the packet.
Once the noodles are cooked, drain the water and rinse them under cold water to prevent sticking. toss the noodles with a little oil to coat them evenly and set them aside.
Heat oil in a pan over medium heat.
Add sliced onions and finely chopped ginger to the pan. cook until the onions become soft and translucent.
Now, add the sliced carrot, green capsicum, green beans, and green onions to the pan. season with a pinch of salt and cook the vegetables for 2 to 3 minutes until they are slightly tender.
