Begin by preparing the spiced coconut stuffed eggplant. make longitudinal slits in the eggplants, keeping them attached at the stem end.
Carefully rub turmeric powder inside the slits and on the surface of the eggplants.
Heat some sesame oil in a pan and add mustard seeds. allow them to splutter.
Add asafoetida, curry leaves, and the prepared eggplants. cover and cook until the eggplants are tender.
While the eggplants are cooking, in a separate pan, roast coriander seeds, chana dal, green chillies, and cinnamon until they turn aromatic. let this mixture cool.
