To create the fenugreek infused mushroom curry, start by washing the button mushrooms. in a bowl, mix the yogurt, kashmiri red chilli powder, and ginger paste. marinate the mushrooms in this mixture for about 5 minutes.
Soak the dried fenugreek leaves in water for 5 minutes, then strain and set aside.
Heat a small wok with oil. quickly fry the marinated mushrooms for 2 minutes and remove from the wok.
In the same pan, add the bay leaf, nigella seeds, and ginger-garlic paste. saute for 1 minute until aromatic.
Add finely chopped onions to the pan and saute until they turn soft and translucent.
