To prepare vegan creamy eggplant curry, start by washing and cutting the eggplants into cubes. keep them immersed in water until you cook to prevent oxidation.

Blanch the tomatoes in enough water for 10 minutes, remove the skin, and make a smooth puree using a mixer grinder. set it aside.

Heat oil in a pan, add the drained eggplants, and saute them until they are 3/4th cooked and turn golden in color. keep them aside.

In the same pan, add bay leaf, chopped garlic, and saute until the garlic turns golden.

Add grated ginger, chopped green chillies, and tomato puree. saute for a minute.
