To start preparing the ginger-infused fish curry, gather all the required ingredients.
In a pan, heat mustard oil for shallow frying. while the oil heats up, rub the fish fillets with 1/2 teaspoon of turmeric powder and salt, ensuring they are evenly coated.
Once the oil is hot, shallow fry the fish fillets until they are cooked and golden brown. remove the fried fish from the pan and set them aside on a plate or in a bowl.
If needed, add an additional half to one teaspoon of mustard oil to the same pan and heat it.
Once the oil is hot, add bay leaf, red chilli, and panch phoron. wait for them to crackle.
