In a bowl, combine onion, vinegar, and salt. set aside to pickle for a few minutes.
Heat oil in a pan or kadai over medium heat. add garlic and ginger and saute until fragrant.
Add chopped onion and green chili to the pan and saute until the onions become translucent. then, add chopped green capsicum and saute for a minute.
Stir in soy sauce, vinegar, tomato ketchup, and chili sauce. mix well to combine.
Add paneer cubes to the pan and gently stir to coat them with the sauce. cook for 2-3 minutes until the paneer is soft and tender. if the mixture starts sticking to the pan, you can add a teaspoon of water to loosen it up.
