To begin making thai style spicy pasta with roasted vegetables, cook the penne pasta in boiling water along with a little salt until it is al dente.
Once the pasta is cooked, drain it and rinse under cold water to stop the cooking process. drizzle a bit of olive oil to prevent the pasta from sticking together. set the pasta aside.
In a wok, heat oil over medium heat. add minced ginger and garlic and saute for a couple of minutes.
Add the cut vegetables - carrot, beans, and capsicum - to the wok and continue to stir-fry for 2-3 minutes until the vegetables are well roasted.
Once the vegetables are roasted, add the thai green curry paste and fresh cream to the wok. stir well to coat the vegetables.
