Grind the garlic cloves and ginger in a blender with a splash of water. in a large mixing bowl, add the chicken and mix in the garlic-ginger paste. ensure the chicken is well coated and let it marinate for at least an hour, preferably overnight.
Heat the vegetable oil in a large heavy-bottomed saucepan over medium heat. add the bay leaves and red bell pepper and fry for a few seconds. then, add the white onion and fry for 17-18 minutes, stirring well. as the onions begin to brown, add the marinated chicken. increase the heat slightly and sear the chicken pieces on all sides for 7-8 minutes.
Stir well and add the red chilli powder, turmeric, cumin powder, and coriander powder. fry for a minute to release the flavors. next, add the tomato puree and mix well, scraping the bottom of the pan. cook for 4 minutes.
Reduce the heat to medium and gradually add the greek yogurt, stirring well to prevent curdling. cook for 6 minutes. then, add water, diced potatoes, and season to taste with salt. reduce the heat to low, cover the saucepan with a lid, and let the chicken curry simmer for 20 minutes. stir halfway through the cooking process. turn off the heat and sprinkle garam masala over the curry. allow the chicken to rest.
In a separate frying pan, heat the vegetable oil and fry the shallots for 5-6 minutes on each side over medium heat. for added flavor, you can char the onions slightly by frying them a little longer. add the fried shallots to the curry, stirring well. if the gravy is too thick, you can add a splash of water. garnish with coriander leaves and lemon juice. serve the spicy chicken with double onions alongside rice or roti.
