In a saucepan, heat sugar with two and a half cups of water until the sugar dissolves. let the mixture come to a boil. add lemon juice and lemon peel, and continue boiling for about five minutes. remove from heat.
Grease a small aluminium tray with one tablespoon of butter. place a layer of kadayif into the tray and press it down. place a slab of paneer on top and press gently.
Add another layer of kadayif over the paneer and press gently once again. place the tray on a gas burner. drizzle melted butter all around and cook over low heat until the underside turns reddish. flip it over and continue cooking until the other side turns red as well.
Pour the sugar water on top of the cooked kadayif and let it get absorbed. place a large slab of butter on top and serve immediately.
Repeat the same process to prepare more portions of sweet paneer kadayif.
