In a bowl, mix paneer, yogurt, turmeric, and salt. set aside to marinate.

Heat a frying pan over medium heat and dry roast nigella, coriander seeds, fenugreek seeds, fennel seeds, and black pepper for 1-2 minutes until fragrant. the seeds will darken in color and release a delightful aroma.

Crush the roasted seeds using a mortar and pestle or a rolling pin. set aside.

In the same pan, add olive oil and reduce the heat to low-medium. roast the red chilies until they turn darker in color. remove from the pan and break each chili into 2-3 pieces.

Increase the heat to medium and add asafoetida, followed by the paneer mixture. stir-fry for 3-4 minutes until most of the moisture has evaporated. be careful not to overcook the paneer, as it should remain moist and coated with yogurt. turn off the heat.
