Rinse the rice thoroughly under cold water until the water runs clear. soak the rice in water for about 30 minutes, then drain.
In a pot, add the soaked rice and 1.5 cups of water. bring it to a boil, then reduce the heat to low, cover the pot with a lid, and let it cook for about 15-20 minutes until the rice is fully cooked and fluffy. once done, remove from heat and keep it covered for a few more minutes.
While the rice is cooking, prepare the caramelized onions and chillies. in a separate pan, heat vegetable oil over medium heat.
Add the thinly sliced onions and cook them slowly, stirring occasionally, until they turn golden brown and caramelized.
Now, add the sliced red chillies to the pan and continue to cook for another 2-3 minutes until the chillies soften.
