To prepare the bengali style moong dal with mixed vegetables, start by making the spice powder. crush cinnamon, cloves, and cardamom into a fine powder using a pestle and mortar. set it aside.

Dry roast the moong dal in a heavy-bottomed pan for about 8-10 minutes until it turns beautifully golden. stir it regularly to avoid burning.

After roasting, wash the dal 2-3 times, and then add 2-1/2 cups of water and a pinch of turmeric to it.

Cover and let the dal cook on medium heat until the grains are almost cooked.

While the dal is cooking, prepare the vegetables. in a wok or kadai, lightly stir-fry the cauliflower florets and beans with a pinch of salt and turmeric until they are just about cooked, ensuring they retain their texture.
