To make the curry for the yam kofta, start by making a curry base. in a blender, combine tomatoes, ginger, green chilies, and mint leaves. blend them into a fine puree, adding a little water if needed.
Heat a pan over medium heat and add some cooking oil. once the oil is hot, add cumin powder.
When the cumin powder starts to crackle, add the tomato puree and saut„© it for a couple of minutes.
To the tomato puree, add garam masala, salt, and a pinch of sugar. mix well.
