To prepare vegetable stuffed idli fritters, heat oil in a pan and add cumin seeds.
Once the cumin seeds start crackling, add chopped onions and saut„© until they turn translucent.
Add all the chopped vegetables: carrots, green capsicum, french beans, green peas, and cabbage.
Saut„© for 8-10 minutes or until the vegetables are cooked and tender.
Once the vegetables are done, add turmeric powder, salt, green chilies, black pepper powder, lemon juice, boiled and mashed potatoes, and fresh coriander leaves.
