In a bowl, combine gram flour, salt, red chilli powder, chopped green chilli, ginger paste, garlic paste, and fresh coriander leaves. gradually add water in batches and mix well to prepare a smooth and lump-free batter. the consistency should be neither too thin nor too thick.
Heat vegetable oil in a deep pan or kadhai over medium-high heat until it reaches smoking point. ensure that the oil is well heated to eliminate any lingering aroma.
Meanwhile, wash the cauliflower thoroughly and pat it dry. chop the cauliflower into florets and place them in a separate bowl.
Dip each cauliflower floret into the prepared batter, ensuring it is evenly coated, and carefully drop it into the hot oil. repeat this step and fry the cauliflower florets in batches until they turn golden brown and crispy on the outside.
Once fried, remove the crispy spicy cauliflower fritters from the oil and place them on a paper towel to absorb any excess oil.
