In a mixing bowl, combine ragi flour and idli batter to form a thick batter.
Finely grate the carrot and finely chop the onion, green chili, ginger, and curry leaves. add these vegetables along with salt to the batter. mix well to incorporate all the ingredients.
Heat oil in a pan. take spoonfuls of the batter and drop them into the hot oil. fry the fritters until they turn golden brown and crispy.
Once fried, remove the fritters from the oil and drain them on a paper towel to remove excess oil.
Serve these vegetable ragi fritters hot as a healthy and delicious snack.
