To prepare the spicy coconut and peanut stuffed baby brinjal stir-fry, make a 2-way slit in each baby brinjal, forming a cross shape without cutting through till the end. keep them aside.
Now, let's prepare the stuffing. dry roast the peanuts and grated dry coconut until they turn lightly golden. allow them to cool.
In a food processor or chopper, grind the roasted peanuts and coconut along with cumin seeds, coriander powder, garam masala, salt, and red chili powder to create a smooth mixture.
Add in the tomato puree and chopped fresh coriander to the mixture and combine well.
Stuff each baby brinjal with the prepared stuffing, ensuring they are filled properly. place the stuffed brinjals in the fridge for about 10 minutes to allow the stuffing to firm up slightly and avoid oozing during stir-frying.
