To begin preparing the mexican rice and bean bowl, start by cooking the rice according to the package instructions.
Once the rice is cooked, add chopped coriander leaves, lemon juice, black pepper, and salt to the cooked rice. mix well to combine all the flavors.
For the spicy beans, heat olive oil in a pan. add chopped onion and garlic cloves. saute until the onions are softened.
