Start by boiling the wheat noodles in a saucepan with water until they are cooked. drain the water and toss the noodles with a little oil to prevent sticking. set aside.
In a skillet, heat oil and add fenugreek seeds, sugar, sliced onions, ginger, and garlic. saute until the onions become translucent. allow it to cool down.
Transfer the saute onion mixture to a blender and grind it into a smooth paste.
In the same saucepan used for boiling the noodles, add the masala powders like coriander powder, black pepper powder, red chili powder, garam masala powder, and dry mango powder to the noodle water. also, add the ground onion paste and let it boil for a few minutes. adjust the consistency by adding more water if needed.
Add red chili sauce, tomato ketchup, and salt to taste to the soup. mix well and let it simmer for a few minutes. finally, add milk and let it boil for an additional 5 minutes. set the soup aside.
