Begin by preparing the spicy shrimp and veggie rice bowl. cook the basmati rice according to package instructions and set it aside.
While the rice is cooking, peel and dice the sweet potato into small cubes. steam or microwave the sweet potato cubes until they are tender but not mushy. set them aside.
In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. add the deveined and peeled shrimp, and season with black pepper and salt. saut„© the shrimp until they turn pink and are cooked through, about 2-3 minutes per side. remove them from the skillet and set them aside.
In the same skillet, add the remaining 1 tablespoon of oil. add minced garlic and sliced onions. saut„© until the onions become translucent.
Add the diced red bell pepper, broccoli florets, and carrot strips. stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
