Preparing ridge gourd: begin by lightly peeling the ridge gourd. slice it into discs and further chop each disc into smaller pieces. keep them aside for later use.
Tempering: in a wide pan, heat a teaspoon of ghee. add mustard seeds and curry leaves. allow them to sputter, releasing their aromatic flavors.
Sauteing ridge gourd: add the chopped ridge gourd to the pan and toss the pieces on low heat until they slightly soften. sprinkle a bit of salt to taste and continue cooking.
Releasing moisture: the ridge gourd will release some water as it cooks. cover the pan and let it cook on low flame for about 3-4 minutes until the ridge gourd is fully cooked and turns mushy.
Cooling ridge gourd: set the cooked ridge gourd aside to cool while you prepare the coconut curry for the tambli.
