To begin making the spicy brinjal and potato masala gravy, first, soak the tamarind pulp in water for a few minutes to extract the tamarind juice. strain the juice and set it aside.
Cut the brinjals and potatoes into bite-sized pieces and keep them aside.
In a pan, heat a little oil and saute the chopped onions until they become translucent.
Add chopped tomatoes, red chilli powder, turmeric powder, and cook until the tomatoes turn soft and the oil starts to separate from the mixture.
Meanwhile, in a separate pan, dry roast the fennel seeds, poppy seeds, and cashew nuts until they release their aroma. allow them to cool, then grind them along with grated coconut and red chillies into a fine paste using some water.
