To prepare the spiced bhindi masala gravy, start by rinsing and drying each bhindi thoroughly.

After drying, slit the bhindi vertically from the top, stopping about half an inch from the tail, keeping the slices thin and intact.

Heat oil in a pan, add the bhindi, and sprinkle some salt. saute the bhindi until it is cooked.

Cover the pan partially while cooking to allow steam cooking and roasting of the bhindi. stir occasionally to ensure even cooking.

Meanwhile, make a puree of the tomatoes using a mixer grinder and keep it aside.
