Rinse the cowpeas (lobia) thoroughly and soak them in water for about 6-8 hours or overnight. drain the water before cooking.
In a pressure cooker or a pot, add the soaked cowpeas along with fresh water. cook them until they are soft and tender. drain any excess water and set the cooked cowpeas aside.
In a blender, combine the tomato puree, chopped onion, garlic cloves, green chillies, and apple peel. blend them into a smooth paste.
Heat olive oil in a pan or skillet over medium heat. add cumin seeds and let them splutter.
Add the cinnamon stick to the pan and saute for a minute to release its aroma.
