To prepare the tomato onion curry (tamatar pyaz ki sabzi), start by gathering and preparing all the ingredients.

Heat mustard oil in a pressure cooker over medium heat and add the mustard seeds. allow them to crackle.

Once they crackle, add the curry leaves, bay leaves, cloves, and cinnamon stick. saute for a few seconds until fragrant.

Add the sliced onions, green chillies, and garlic to the cooker. saute the onions until they become slightly soft.

Once the onions are soft, add the tomatoes, turmeric powder, red chilli powder, and salt to taste.
