Begin by boiling the maize (corn) and green peas in a pot of salted water until they are tender. drain and set aside.
In a dry skillet, roast the cumin seeds, basil seeds, dried red chillies, and cloves over medium heat until fragrant. remove from the skillet and let them cool. once cool, grind them into a fine powder using a spice grinder or mortar and pestle.
In the same skillet, heat 2 teaspoons of cooking oil. add ginger, onions, and grated or desiccated coconut. saut„© until the onions turn translucent and the coconut begins to brown.
Allow the onion-coconut mixture to cool and then blend it into a smooth paste using a blender or food processor. you can add a little water if needed to facilitate blending.
In a separate large pan, heat 2 teaspoons of cooking oil. add mustard seeds and curry leaves. let them splutter.
