In a large mixing bowl, combine multigrain flour, turmeric powder, red chilli powder, cumin powder, and a pinch of asafoetida (hing).
Add the grated carrot, chopped methi (fenugreek leaves), and finely chopped green chili to the dry ingredients. mix everything together.
Knead the mixture into a firm and smooth dough, adding a little water only if necessary.
Drizzle two tablespoons of sunflower oil over the dough and knead again until the oil is well incorporated. this will help make the theplas soft and flavorful.
Cover the dough and allow it to rest for about 15 minutes.
