To prepare the chayote and carrot kootu variation, start by grinding the ingredients listed in the "to grind" table into a smooth paste using a mixer or hand blender. set this paste aside.
In a wide pan, add the bite-sized cubes of chayote and carrot. sprinkle a pinch of turmeric powder and some salt. add 2 cups of water and cook the vegetables until they are tender.
Once the vegetables are cooked, introduce the ground spice paste into the pan and simmer for 2 to 3 minutes until the kootu thickens. if the kootu becomes too thick, you can add some water to achieve your desired consistency.
Bring the mixture to a boil and then turn off the heat.
In a separate tempering pan, heat oil. add mustard seeds and urad dal. allow them to splutter.
