To prepare the carrot and almond semolina phirni, start by sauteing the grated carrots with a tablespoon of ghee in a saucepan for about 5 minutes.
In another saucepan, heat the milk and add sugar. allow it to boil.
Once it reaches the boiling stage, add the grated carrots, cardamom powder, and saffron strands. let it boil for another 10 minutes.
Gradually add the semolina to the boiling milk mixture while stirring continuously to avoid lumps.
Let the mixture thicken to a desired consistency, and then turn off the heat.
