To make the cucumber semolina flatbread, combine semolina, grated cucumber, finely chopped green chilies, curd, coriander leaves, and salt in a mixing bowl.
Gradually add about 2-3 tablespoons of water to make a dough that just holds all the ingredients together. be cautious with the water as cucumber will also release some moisture.
Cover the bowl and let the dough rest for 15-20 minutes.
After resting, check the consistency of the dough. if needed, add a little more water to make it pliable.
Divide the dough into 4-5 portions.
