In a non-stick pan, dry fry the cumin seeds for 30-60 seconds, tossing constantly until they are toasted. remove from heat.
Wash the courgettes, trim the ends, and grate them (unpeeled) using the coarsest side of a grater into a large bowl. add both flours, ginger, turmeric, coriander, and 1 teaspoon of salt. stir well to combine.
Pour 1 1/2 tablespoons of oil into the flour mixture and rub it in. gradually add 4-5 tablespoons of cold water, mixing until the mixture comes together to form a soft dough, slightly wetter than pastry. tear or cut the dough into 12 equal-sized pieces and shape them into balls.
Dust your work surface and rolling pin with a little extra flour. roll each dough ball into a thin 14cm round, keeping in mind that the edges may appear crinkly.
Heat a large cast-iron griddle or heavy-based frying pan over high heat. place one or two breads on the griddle and cook for 2 minutes on one side, gently patting the edges with a clean soft cloth to keep the bread in contact with the heat and help it cook faster. flip the breads over and cook for an additional 2 minutes.
