To begin making the papaya and carrot kheer, grate the papaya and carrot and keep them aside.
Heat ghee in a heavy-bottomed pan and add the grated papaya and carrot.
Saute for a few minutes until a pleasant aroma arises.
Stir in the milk and sugar, and simmer the mixture until the milk condenses and the kheer thickens.
The mixture will become sticky and start leaving the sides of the pan.
