To make nutritious pumpkin carrot idli, begin by preparing the idli batter. you can use store-bought idli batter or make it at home using our homemade idli dosa batter recipe.
For the pumpkin puree, pressure cook the pumpkin cubes with 1/4 cup of water. cook for 2 whistles, then allow the pressure to release naturally. let the pumpkin cool down.
Transfer the cooked pumpkin along with the water into a mixer jar and blend it into a smooth puree without adding any additional water.
In a mixing bowl, combine the pumpkin puree, grated carrots, and the idli batter. mix well until all the ingredients are thoroughly combined.
Preheat an idli steamer with water and generously grease the idli plates with oil or ghee.
