In a large pan, heat 2 tablespoons of sunflower oil. add the cumin seeds and let them crackle for a few seconds. add the chopped onions and chestnut mushrooms. cook for about 10 minutes, stirring frequently, until the onions have softened and started to turn golden.
Sprinkle in the garam masala, add the garlic paste, ginger, and chopped green chilli. stir well to mix the spices. if desired, add a handful of spinach to the pan, cover, and cook for a minute or two until the spinach wilts. repeat this process until all the spinach is wilted. season with salt to taste. remove the mixture from the pan with a slotted spoon and transfer it to a warm serving dish. keep it warm.
In the same pan, heat the remaining oil. slowly fry the onion slices with turmeric until the onions turn golden brown.
To make the minted yogurt relish, mix together greek yogurt, finely chopped fresh mint leaves, and salt in a bowl.
Serve the mumbai mushroom wraps by spooning the mushroom and spinach mixture onto a wrap or flatbread. top with the golden brown onions. serve with the minted yogurt relish on the side.
