To prepare the roasted eggplant with tahini and yogurt dip, begin by roasting the eggplants.
Slice the eggplants lengthwise into 1/4-inch thick slices.
Sprinkle some salt over the slices and drizzle them with olive oil. toss them well to ensure they are evenly coated.
There are two roasting methods you can choose from:
Oven roasting: preheat the oven to 180ÔøΩc. arrange the eggplant slices on a baking tray, loosely cover the tray with foil, and roast the eggplants for about 15 to 20 minutes, or until they are soft and pliable, turning them halfway through.
