In a bowl, break the eggs and add milk. sprinkle some salt and whisk until well combined.
Heat a flat skillet with a little sunflower oil, add the mushrooms, and saute until all the water has evaporated. sprinkle a little salt, dried oregano, and black pepper powder. toss well and transfer the mushrooms to a bowl.
Heat a flat non-stick skillet, add a tablespoon of butter, and keep the heat at medium. slowly add the whisked eggs to the skillet and let them cook for about 5 minutes.
Add saute mushrooms, torn spinach leaves, and crumbled goat cheese to one side of the omelette.
Fold the omelette in half and serve it warm.
