To begin making the saffron and cardamom yogurt mousse with honey and nuts, start by soaking a pinch of saffron strands in a tablespoon of milk. set it aside.
For the dry fruit base, coarsely crush the almonds and pistachio nuts in a mortar and pestle. transfer them to a mixing bowl.
Add sugar, butter, and cardamom powder to the dry fruits. mix well.
In dessert shot glasses, place a tablespoon of the dry fruit mix and press it down firmly. set aside.
To make the mousse, in a small mixing bowl, bloom the agar agar powder by combining it with three teaspoons of water. wait for the agar agar granules to swell up.
