Prepping the ingredients: begin the preparation of the nourishing drumstick leaves lentil stew by getting all the ingredients ready.
Cooking the greens and veggies: in a pressure cooker, combine tamarind water, chopped onion, diced carrot, drumstick leaves, salt, and sambar powder. add a cup of water and pressure cook for 2 whistles. switch off the heat and release the pressure promptly to preserve the texture of the drumstick leaves.
Cooking the lentils: in another pressure cooker, cook the arhar dal with 2ÈôÜ cups of water and turmeric powder. pressure cook for 2 whistles, then let it simmer on low heat for 4-5 minutes. turn off the heat and allow the pressure to release naturally.
Mashing the lentils: once the pressure is released, open the cooker and use a potato masher to mash the cooked dal well.
Combining the elements: add the mashed dal to the drumstick leaves and vegetable mixture in the pressure cooker. stir well to combine all the flavors. adjust the salt if necessary.
