To begin making karnataka style kashi halwa, peel and grate the ash gourd. squeeze out the excess water and set it aside.

In a heavy-bottomed pan, heat a tablespoon of ghee and roast the cashew nuts until they turn golden brown. remove and keep them aside.

In the same pan, add another tablespoon of ghee and add the grated ash gourd. cook it on low heat until it becomes soft and the moisture evaporates.

Add sugar to the cooked ash gourd and mix well. continue to cook on low heat.

In a small bowl, soak a pinch of saffron in a tablespoon of warm milk.
