Grate the parmesan cheese and set it aside in a bowl.
Heat a non-stick tawa (griddle) and place a medium-sized cookie cutter in the center. sprinkle some grated cheese inside the cookie cutter and cook on low heat until the cheese melts, sets, and becomes crisp.
Gently loosen the sides of the cheese taco and remove the cookie cutter. place a rolling pin in the middle of the cheese disc and fold the edges towards the center to shape it like a taco. repeat the process to make more cheese tacos.
Thinly slice the red cabbage and transfer it to a bowl. thinly shred the lettuce leaves and add them to the bowl. add sliced green capsicum and mayonnaise. mix well to prepare the coleslaw and set it aside.
Halve the avocado, remove the seed, and scoop out the flesh onto a plate. squeeze lemon juice over the avocado to prevent browning.
